5 Fresh Summer Salad Recipes ~ Option 5 ~ Swiss Chard, Kale and Orange Salad with Goat’s Cheese

Prep Time: 15 Minutes ~ Cook Time: 20 Minutes (Quinoa)

 

2 Cups Kale, Washed, Cut and Massaged

2 Cups Beet Tops, Washed and Cut into Bite Sized Pieces

2 Cups Swiss Chard, Washed and Cut into Bite Sized Pieces

1 Cup Spinach, Washed and Cut into Bite Sized Pieces

2 Cups Parsley Leaves, Washed, Picked and Ripped by Hand

1/8 cup Toasted Pine Nuts

1 Cup Cooked Quinoa

1/4 Red Onion, Sliced Thin

2 Fancy Peppers, Sliced Thin (You May Use Regular Peppers if You Prefer)

1 Orange Zested

2 Oranges, Segmented

1/3 Cup Goat’s Cheese

Salt and Pepper to Taste

 

*To simplify the recipe, you may choose to leave out the Quinoa.  This will reduce the amount of time it takes to prepare the salad.
