(Prep Time: 15 minutes ~ Cook Time: 20-30 Minutes)
4 Cups Hon Dashi broth
3 Tablespoons of Tamari
4 Tablespoons of Mirin
1/4 zest of a lime
Pinch of salt
1/3 cup of broccoli flourettes
1 carrot finely julienned
1/4 cup red cabbage julienned
1/4 cup of yam cut into small wedges
1/4 butternut squash cut baronet
1/2 bean sprout
1 handful of gai lan leaf
1/4 cup of golden beet sliced thin
3 tablespoons of daikon radish sliced thin
4 sprigs of cilantro chiffonade
2 small turkey legs (braised)
2 tablespoons of Bonito flake
100 grams of hand peeled shrimp
2 cups cooked Soba noodles
Bring a medium pot of water up to boil to cook Soba noodles half way. Drain water and rinse in cold water.
Heat Hon Dashi broth to a simmer. Add Tamari, Mirin, lime zest, salt and set aside (off the heat).
Prepare all vegetables and pick the meat off the bone from the turkey leg.
Without the broth and Bonito flake, arrange all of the ingredients in a large bowl (including 2 cracked eggs).
Bring broth back up to a boil and, once boiled, pour the broth into the bowl of ingredients.
Add Bonito flake to garnish.
